Xarello grown organically on calcareous clay soils of the Baix Penedès. Hand harvested, direct press of whole clusters (no destemming) with spontaneous fermentation in stainless steel followed by 3 months further aging sur lie in stainless. Bottled without fining, filtration, and zero S02. A profoundly mineral and bright still white wine (not sparkling) that is shocking low in ABV. Annual production is 3,500 Liters. Very mineral this vintage, a touch of reduction, but that good kind of reduction that enhances the wine and gives it tension.
